4-Ingredient Slow Cooker Chicken with Stuffing

1. Prepare the chicken

Season both sides of the chicken breasts lightly with salt and black pepper. Arrange them in a single layer across the bottom of your slow cooker.

If the chicken breasts are particularly thick, try to choose pieces of similar size so they cook evenly.

2. Add the chicken broth

Pour the chicken broth evenly over the seasoned chicken. The broth provides moisture during cooking and helps keep the meat tender.

3. Prepare the stuffing mixture

In a separate bowl, combine the dry stuffing mix, cream of mushroom soup, and water. Stir until the stuffing is evenly coated and slightly moistened.

Spoon this mixture over the chicken and spread it gently into an even layer. Do not press it down too firmly—the stuffing needs a little space to absorb the moisture and become tender.

4. Slow-cook the meal

Cover the slow cooker with the lid and cook using one of the following settings:

  • Cook on HIGH for approximately 4 hours
  • Cook on LOW for approximately 6 to 7 hours

Cooking times may vary depending on the size of the chicken breasts and the type of slow cooker. The chicken is ready when it is tender and reaches an internal temperature of 165°F (74°C).

Avoid repeatedly opening the lid while the meal cooks, as this releases heat and can increase the cooking time.

5. Serve and enjoy

Once the chicken is fully cooked, gently fluff the stuffing with a fork. Serve each chicken breast with a generous spoonful of creamy stuffing and some of the flavorful sauce from the slow cooker.

For an even richer finish, allow the dish to rest uncovered for about five minutes before serving. This gives the stuffing time to absorb any remaining moisture.

Helpful Tips for the Best Results

For tender chicken, avoid cooking it much longer than necessary. Chicken breasts are lean and may become dry if left in the slow cooker for too long.

If you prefer a creamier stuffing, add two or three extra tablespoons of broth. If you like it firmer, reduce the added water slightly.

Cream of chicken or cream of celery soup can also be used if cream of mushroom is unavailable. Each option will give the dish a slightly different but equally comforting flavor.

You can add a little dried thyme, rosemary, sage, or garlic powder for additional flavor. However, taste the stuffing mixture before adding extra salt because packaged stuffing and canned soup may already contain plenty of seasoning.
