1. Prepare the Chicken
Cut the chicken breasts into small pieces and place them in a food processor.
Pulse several times until the chicken is finely chopped but not completely smooth.
You want a slightly textured mixture so the nuggets remain juicy and tender after cooking.
2. Mix the Ingredients
Transfer the chicken to a large bowl.
Add the mozzarella, Parmesan, egg, breadcrumbs, garlic, Italian seasoning, paprika, black pepper, salt and parsley.
Mix everything thoroughly until you have a cohesive mixture that can easily be shaped.
If the mixture seems too soft, add another tablespoon of breadcrumbs.
3. Shape the Nuggets
Lightly wet your hands with water or oil to prevent sticking.
Take a small portion of the chicken mixture and shape it into a compact nugget.
Keep the pieces approximately the same size so they cook evenly.
Place the shaped nuggets on a parchment-lined tray.
4. Chill Before Cooking
For the best texture, place the shaped nuggets in the refrigerator for 15–20 minutes.
This helps them firm up and makes them easier to cook without falling apart.
5. Cook Until Golden
Heat a thin layer of olive oil in a large nonstick skillet over medium heat.
Carefully place the nuggets into the hot pan without overcrowding it.
Cook for approximately 4–5 minutes per side, turning gently, until deeply golden on the outside and completely cooked through.
The exact cooking time will depend on the size and thickness of your nuggets.
For food safety, chicken should reach an internal temperature of 165°F (74°C).
Oven-Baked Method
If you prefer to bake them, arrange the nuggets on a parchment-lined baking sheet.
Lightly brush or spray them with olive oil.
Bake at 400°F (200°C) for approximately 18–22 minutes, turning halfway through cooking.
The exterior should be golden and the chicken fully cooked.
Air Fryer Method
Place the nuggets in a single layer in an air fryer basket.
Lightly spray them with oil and cook at 390°F (200°C) for approximately 10–14 minutes, turning halfway through.
Avoid stacking the nuggets because good air circulation is what gives them their crispy exterior.
