Crispy Cheesy Cauliflower Bites

1. Prepare the Cauliflower

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Wash the cauliflower thoroughly and cut it into small, bite-sized florets.

Try to keep the pieces relatively similar in size so they cook evenly.

Bring a pot of lightly salted water to a boil. Add the cauliflower and cook for approximately 3–4 minutes, just until it becomes slightly tender.

Drain very well and allow the cauliflower to cool for a few minutes.

The cauliflower should not be overly soft. You want it tender enough to bite through while still maintaining some structure.

2. Prepare the Crispy Coating

In a large bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, paprika, garlic, salt and black pepper.

Mix everything together until the seasonings are evenly distributed.

The Parmesan is especially important because it helps create a beautifully browned and savory crust during baking.

3. Prepare the Egg Mixture

In a separate bowl, whisk the eggs until smooth.

Add the shredded mozzarella and mix gently.

This creates a cheesy coating that helps the breadcrumb mixture adhere to the cauliflower.

4. Coat the Cauliflower

Take each cauliflower floret and dip it into the egg-and-cheese mixture.

Make sure it is lightly coated on all sides.

Then transfer it into the seasoned breadcrumb mixture.

Gently press the breadcrumbs onto the cauliflower so they stick properly.

Repeat until all the cauliflower pieces have been coated.

5. Arrange on the Baking Sheet

Place the coated cauliflower pieces on the prepared baking sheet.

Leave a little space between each piece.

This is important because overcrowding the pan can trap steam and prevent the coating from becoming properly crisp.

Lightly drizzle or spray the bites with olive oil.

6. Bake Until Golden

Place the tray in the preheated oven and bake for approximately 20–25 minutes.

Turn the cauliflower bites halfway through cooking so that both sides become golden and crisp.

For an especially crunchy finish, place them under the broiler for the final 1–2 minutes.

Keep a close eye on them during this step because the Parmesan and breadcrumbs can brown quickly.

The Best Part: That Crispy Cheese Crust

When they're ready, the cauliflower should have a beautiful golden exterior with small browned spots throughout.

The outside should be crisp enough to provide a satisfying crunch, while the cauliflower inside remains tender.

The melted cheese adds a rich, savory flavor that makes these much more exciting than ordinary roasted vegetables.
