Pineapple Crackle Salad: Creamy, Crunchy, Sweet, and Irresistible

1. Drain the Pineapple Very Well

Start by placing the crushed pineapple in a fine-mesh strainer.

Allow it to drain for several minutes.

You can gently press the pineapple with the back of a spoon to remove even more excess juice.

This step is extremely important.

If too much pineapple juice remains in the mixture, the dessert may become watery instead of thick and creamy.

2. Whip the Cream

Pour the cold heavy whipping cream into a large mixing bowl.

Using an electric mixer, beat the cream until it begins to thicken.

Gradually add the powdered sugar and vanilla extract.

Continue beating until soft-to-medium peaks form.

The cream should look light, fluffy, and stable.

Be careful not to overbeat it.

3. Combine the Pineapple Mixture

In a separate large bowl, add:

  • Drained pineapple
  • Mini marshmallows
  • Shredded coconut
  • Chopped pecans

Gently mix everything together until the ingredients are evenly distributed.

At this point, you’ll already have a wonderful mixture of soft, chewy, fruity, and crunchy textures.

4. Fold in the Whipped Cream

Add the whipped cream to the pineapple mixture.

Using a spatula, gently fold everything together.

Avoid stirring aggressively.

The goal is to keep the whipped cream light and airy.

Continue folding until the mixture looks creamy and evenly combined.

5. Chill Before Serving

Cover the bowl and place it in the refrigerator.

Let the Pineapple Crackle Salad chill for at least 1 to 2 hours.

This resting time allows the flavors to blend together while the marshmallows soften slightly.

For the best flavor and texture, serve the salad cold.
