Crispy Fried Green Tomatoes with Cornmeal Crust

1. Prepare the Tomatoes

Wash the green tomatoes and slice them into even rounds.

Sprinkle both sides with salt and black pepper, then let them rest for a few minutes. Pat them gently with a paper towel to remove excess moisture.

2. Prepare the Coating

Set up three bowls:

  • Flour in the first bowl
  • Eggs mixed with milk in the second bowl
  • Cornmeal, breadcrumbs, and paprika in the third bowl

This creates a crispy coating that sticks well to the tomatoes.

3. Coat the Tomato Slices

Dip each tomato slice into the flour first, then into the egg mixture, and finally into the cornmeal breadcrumb coating.

Press gently so the crust covers the tomato evenly.

4. Fry Until Golden

Heat vegetable oil in a skillet over medium heat.

Fry the coated tomato slices for about 2–3 minutes per side until golden brown and crispy.

Remove and place them on paper towels to drain excess oil.
