1. Prepare the Meat Mixture
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, French onion soup mix, Worcestershire sauce, salt, and pepper.
Mix gently until everything is combined. Avoid overmixing to keep the meatloaf tender.
2. Cook the Onions
Melt butter in a skillet over medium heat.
Add sliced onions and cook until soft and golden, about 15–20 minutes. This creates the deep French onion flavor.
3. Slow Cook the Meatloaf
Shape the beef mixture into a loaf and place it in the crockpot.
Add the caramelized onions around and on top of the meatloaf. Pour in the beef broth.
Cover and cook on low for about 6–8 hours or until fully cooked.
4. Add the Cheese
During the last few minutes of cooking, place Swiss cheese slices on top.
Cover again until the cheese melts and becomes deliciously gooey.
